A really easy and tasty vegetable ommlette packed with bright colourful veggies.

Ingredients
  • 3 eggs
  • ½ cup of your favourite chopped vegetables - tomatoes, red or yellow peppers, onions or spinach. 
  • 50g of grated cheese
  • Fresh herbs to add as a garnish
Method
  • Beat the eggs and then pour into a hot pan.
  • Add the vegetables and cheese, cook until set.
  • Fold and serve.
Tip: Great with a slice of toast for a filling meal.
