Ingredients
- 3 eggs
- ½ cup of your favourite chopped vegetables - tomatoes, red or yellow peppers, onions or spinach.
- 50g of grated cheese
- Fresh herbs to add as a garnish
Method
- Beat the eggs and then pour into a hot pan.
- Add the vegetables and cheese, cook until set.
- Fold and serve.
Tip: Great with a slice of toast for a filling meal.
