Looking for a classic tomato soup recipe? 

This simple, healthy recipe is a great one to start with if you've never made soup.

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tin (400g) chopped tomatoes
  • 500ml vegetable stock
  • A handful of fresh basil leaves (or 1 tsp dried basil)
  • Salt and pepper to taste
  • Optional: a splash of cream or a sprinkle of grated cheese for serving
  • Heat the olive oil in a large pan over a medium heat.
  • Add the chopped onion and cook for 5 minutes until soft.
  • Stir in the garlic and cook for another minute.
  • Pour in the chopped tomatoes and vegetable stock, then bring to the boil.
  • Reduce the heat and simmer for 10 minutes to let the flavours blend.
  • Add the basil leaves, then blend the soup with a hand blender until smooth (or leave it chunky if you prefer).
  • Taste and season with salt and pepper.
  • Serve hot with crusty bread, and add a swirl of cream or sprinkle of cheese if you like.
Tip: This soup freezes really well. Make a big batch and save some for another day!
