This simple, healthy recipe is a great one to start with if you've never made soup.
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 tin (400g) chopped tomatoes
- 500ml vegetable stock
- A handful of fresh basil leaves (or 1 tsp dried basil)
- Salt and pepper to taste
- Optional: a splash of cream or a sprinkle of grated cheese for serving
- Heat the olive oil in a large pan over a medium heat.
- Add the chopped onion and cook for 5 minutes until soft.
- Stir in the garlic and cook for another minute.
- Pour in the chopped tomatoes and vegetable stock, then bring to the boil.
- Reduce the heat and simmer for 10 minutes to let the flavours blend.
- Add the basil leaves, then blend the soup with a hand blender until smooth (or leave it chunky if you prefer).
- Taste and season with salt and pepper.
- Serve hot with crusty bread, and add a swirl of cream or sprinkle of cheese if you like.
Tip: This soup freezes really well. Make a big batch and save some for another day!
