Sausage & Veggie Tray Bake

A fuss-free, flavour-packed dinner

Ingredients
  • 6 pork or chicken sausages
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 1 courgette (zucchini), sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
Method
  • Preheat oven to 200°C (180°C fan).
  • Place sausages and chopped vegetables on a baking tray.
  • Drizzle with olive oil, sprinkle oregano, salt, and pepper.
  • Toss everything together and spread out evenly.
  • Bake for 30–35 minutes, turning sausages halfway through, until golden and cooked through.
Tip: Serve with mashed potatoes or crusty bread.
