A fuss-free, flavour-packed dinner

Ingredients
- 6 pork or chicken sausages
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 1 courgette (zucchini), sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Method
- Preheat oven to 200°C (180°C fan).
- Place sausages and chopped vegetables on a baking tray.
- Drizzle with olive oil, sprinkle oregano, salt, and pepper.
- Toss everything together and spread out evenly.
- Bake for 30–35 minutes, turning sausages halfway through, until golden and cooked through.
