One-pan veggie stir fry

Sizzle up a stir-fry for an easy mid-week meal

A colourful, tasty stir-fry is super simple to make. This recipe will be ready in minutes and it's packed with goodness.

  • 2 cups mixed vegetables; peppers, onions, broccoli, sweetcorn or peas (fresh or frozen)
  • 2 tbsp soy sauce
  • 1 tbsp oil
  • 250g egg or rice noodles 
  • Place the noodles in a pan and cook on a low heat for 8 minutes
  • Stir-fry the veggies in oil on a low heat until it starts to brown
  • Add soy sauce
  • Add the cooked noodles to the pan with the vegetables
  • Toss together and eat!
