In less than 10 minutes you can have this simple cheese quesadilla ready for a quick lunch or dinner.

  • 4 tortillas
  • 100g of grated cheese
  • Leftover vegetables - red or yellow peppers, spring onions or tomatoes
  • 400g tin of black beans or chickpeas
  • Fill the tortillas with the grated cheese and your vegetables.
  • Add your chosen beans.
  • Fold the tortillas in half and toast in a dry pan for 2-3 mins each side.
  • Cut into wedges and serve.
Tip: Serve with salsa or yoghurt dip.
