- 4 tortillas
- 100g of grated cheese
- Leftover vegetables - red or yellow peppers, spring onions or tomatoes
- 400g tin of black beans or chickpeas
- Fill the tortillas with the grated cheese and your vegetables.
- Add your chosen beans.
- Fold the tortillas in half and toast in a dry pan for 2-3 mins each side.
- Cut into wedges and serve.
Tip: Serve with salsa or yoghurt dip.
