- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 carrot, grated
- 1 celery stick, finely chopped (optional)
- 250g lean minced beef (or turkey for a lighter option)
- 1 tin (400g) chopped tomatoes
- 2 tbsp tomato puree
- 1 tsp dried mixed herbs
- 150ml beef or veg stock
- Salt and pepper to taste
- Optional: a splash of milk for creaminess
- Heat the oil in a large pan over medium heat.
- Add the chopped onion, carrot, and celery, and cook for 5 minutes until soft.
- Add the mince and cook until browned, breaking it up with
- spoon.
- Stir in the tomato puree, chopped tomatoes, herbs, and stock.
- Simmer for 15 minutes, stirring occasionally, until thickened.
- Season to taste and serve over cooked spaghetti or your favourite pasta.
